Ok, the intake manifold gasket was the culprit for the high idle/vacuum leak. Sucking air and oil from valley at cyl 7 & 8.
Idle in Park is 1300 rpm and 1100 in gear, so much better.

Problem now is, when I shutdown, I get a steady stream of vapour out the carb from the drilled plates and this will go on for a full minute.

What causes that?

Some intake manifolds have pockets in the bottom where fuel gathers and it burns off from intake heat on shut down.  Obviously make sure your float levels are proper and listen for any dripping sounds (you will hear a hiss if fuel drips onto the hot intake floor).  BUT since it only goes on for 60 seconds, its probably not a leak or anything like that.
